How do you make decaffeinated coffee? The green coffee beans are put in large pressurized silos. Then CO2 gas in introduced which acts a a solvent for caffeine. The CO2 then passes through water to remove the caffeine. Because the CO2 only interacts with the caffeine it’s the best method for preserving the coffee’s flavor. (By Italian law, decaffeinated coffee can only contain 0.1% caffeine.)
